The Sixth Course: Bounty of the Badlands

Friday November 14th

There’s a wild kind of beauty that lives out in the Badlands — a place shaped by wind, time, and resilience. It’s harsh and haunting, but full of hidden richness for those willing to look closer. That same spirit inspires our next installment of The Sixth Course Dinner Series — Bounty of the Badlands. Join us for a frontier-inspired dining experience that captures the rugged elegance of the American West. Our evening begins with a rustic starter board featuring Rabbit & Rattlesnake Sausage, Elk Sausage, artisan cheeses, sweet cornbread, and pickled vegetables — a true taste of survival and reward. Then comes a Three Sisters Salad, paying homage to the time-honored crops of the plains — corn, beans, and squash — followed by your choice of Coffee-Rubbed Bison Tenderloin or Seared Duck Breast, served with Roasted Root Vegetables and Bone Marrow. To finish, indulge in Apple Dumplings or Dark Chocolate Bread Pudding, paired with Cowboy Coffee kissed with Sweetgrass smoke — the perfect ending to a meal born of earth, fire, and sky. This isn’t just dinner — it’s a story told in flavor, a nod to the land that shaped the frontier spirit.  Reservations are limited. Tickets are $135.00 per person for this evening long event, join us for Bounty of the Badlands, November 14th & 15th, at The Pavilion
