That same spirit inspires our next installment of The Sixth Course Dinner Series — Bounty of the Badlands. Join us for a frontier-inspired dining experience that captures the rugged elegance of the American West. Our evening begins with a rustic starter board featuring Rabbit & Rattlesnake Sausage, Elk Sausage, artisan cheeses, sweet cornbread, and pickled vegetables — a true taste of survival and reward. Then comes a Three Sisters Salad, paying homage to the time-honored crops of the plains — corn, beans, and squash — followed by your choice of Coffee-Rubbed Bison Tenderloin or Seared Duck Breast, served with Roasted Root Vegetables and Bone Marrow. To finish, indulge in Apple Dumplings or Dark Chocolate Bread Pudding, paired with Cowboy Coffee kissed with Sweetgrass smoke — the perfect ending to a meal born of earth, fire, and sky.
